One time I talked to Charles Schultz, and he told me a secret about Snoopy.  I told him that Snoopy was my favorite character and that he was my inspiration for how to live my life.  I love dancing, and playing the piano, and living in a house (although mine’s bigger), and terrorizing yellow birds.  He told me that Snoopy’s favorite food is fried chicken.  I couldn’t believe it.  I always thought that Snoopy was more of a cheeseburger-dog, but I heard it from the man himself.  Years passed and I forgot about this conversation, but recently I found a snoopy waffle maker at a thrift store, and got some maple syrup from my crop share, so this dish came together in my mind instantly.  Sorry Woodstock.

I wanted to precook the chicken sous vide.  I don’t have much experience frying chicken and I thought worrying about getting a good crust was enough to think about. (also, circulator chicken is the best).  So, I  soaked the chicken in buttermilk overnight.  Then rinsed it and bagged it with some franks hot sauce and honey and cooked at 62C for a couple hours. I took it out and  let it dry on a rack.  Prepped a flour dusting, egg wash and flour/cayenne bag.  Dusted in flour, dipped in egg and flopped in flavored flour.  Then fried in dutch oven full of oil at about 200c.  Some heavy cast iron is about the best I can do for a deep frier, and seems to work pretty well for the rare frying that I do.

I very nearly used the Alton Brown waffle recipe.  Just took out the wheat flour and halved it.


4 3/4 ounces all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/2 tablespoons sugar
2 whole eggs, beaten
1 ounces unsalted butter, melted
8 ounces buttermilk, room temperature

The thrift shop waffle maker worked pretty well.  The chicken was really good.  I’d like to try the C02 battered chicken next time to see how that compares.  I could have spiced the breading a bit more.
